Silverbeet, also known as Swiss chard, is a robust leafy green with broad, dark leaves and distinctive white or rainbow-coloured stems that are both edible and nutritious. The leaves have a mild, slightly earthy flavour similar to spinach but with more body, making them ideal for wilting into pasta, frittatas, soups, and curries. Separate the stems from the leaves and cook them briefly first, as they take a little longer to become tender.
